Executive Chef Thomas Muromoto was born and raised in Hawaii and has a culinary career that spans Hawaii's finest restaurants. He has won numerous awards for his creations including the "Top Honor Best of Show" award at the Taste of Lahaina. Prior to his work in Food and Beverage, Muromoto served in the US Navy on the USS Kitty Hawk and surfed on the professional circuit. Chef Thomas is married to wife Liane and they have two children. Award-Winning Pulehu Beef Tenderloin & Opae Marinated Beef tenderloin and Shrimp, grilled over an open flame with a Chipotle Aioli, cilantro pesto and Asian sweet soy sauce. Prepared by Executive Chef Thomas Muromoto 2005 Taste of Lahaina "Best of Show Award" winner. ( Click here for more details ) Six Servings Beef Marinade & dressing 1/4 cup Sweet Soy Sauce 3 Tbsp Soy Sauce, low sodium 1 tsp Fish Sauce 3 Tbsp Water 1 tsp Garlic, Chopped 1 tsp Ginger, peeled chopped 2 Tbsp Green Onions, Chopped 1/4 cup Basil, Chopped 2 Tbsp Cilantro w/ stems chopped 1 Tbsp Sambal olek 1/4cup Sweet Chili Sauce Black pepper, grd to taste 1 cup Salad Oil 4 Beef tenderloin steaks Steps 1) Combine all ingredients and mix well. 2) Reserve 3 tablespoons for topping of entree, Use remainder to marinate beef. 3) Place beef tenderloin or other meats in marinade. Let sit for 4 hours. 4) Place on broiler and cook to desired doneness. Cilantro, Garlic Pesto Shrimp Marinade 1/4 cup Cilantro w/stems chopped 16 Cloves Garlic, cloves roasted 1/8 cup Green onions, chopped 1/4 cup Parsley, leaves only, chop 1 cup Olive blend oil Salt to taste 8 pcs Shrimp, 16/20 ct Steps 1) In blender combine all ingredients blend together well. 2) Season with a little salt. 3) Reserve 3 tablespoons for topping of entree. 4) Use remainder of pesto to marinate shrimp for 2-4 hours. 5) Grill to order. Chipotle Aioli 1 each Egg, yolk 1 tsp Garlic, chopped 2 tsp Chipotle chili's 2 each Lime juice, fresh 4 Tbsp Honey 3 Tbsp Water 1 cup Olive blend Salt to taste Steps 1) In blender combine all ingredients except oil. Blend together well. 2) While blending slowly add oil till all is blended. 3) Season with a little salt. Variations: Use above sauces & marinates with other meats & seafood. In winter, windsurfers from around the world flock to the town of Paia to ride the waves; Hookipa Beach , known all over the globe for its brisk winds and excellent waves, is the site of several world-championship contests. Kanaha , west of Kahului Airport, also has dependable winds. When the winds turn northerly, Kihei is the spot to be; some days, you can spot whales in the distance behind the windsurfers. The northern end of Kihei is best: Ohukai Park , the first beach as you enter South Kiehi Road from the northern end, has not only good winds, but also parking, a long strip of grass to assemble your gear, and good access to the water. Experienced windsurfers here are found in front of the Maui Sunset condo, 1032 S. Kihei Rd., near Waipuilani Street (a block north of McDonald's), which has great windsurfing conditions but a very shallow reef (not good for beginners). Hawaiian Island Surf and Sport , 415 Dairy Rd., Kahului (tel. 800/231-6958 or 808/871-4981; www.hawaiianisland.com), offers lessons (from $79), rentals, and repairs. Other shops that offer rentals and lessons are Hawaiian Sailboarding Techniques , 425 Koloa St., Kahului (tel. 800/968-5423 or 808/871-5423; www.hstwindsurfing.com), with 2 1/2-hour lessons from $79; and Maui Windsurf Co ., 22 Hana Hwy., Kahului (tel. 800/872-0999 or 808/877-4816; www.maui-windsurf.com), which has complete equipment rental (board, sail, rig harness, and roof rack) from $45 and 1- or 2 1/2-hour lessons ranging from $69 to $75.
