Nowhere else will you find so many cultures and ethnic groups all living together. While many of the cultures have mixed and mingled over the years, each culture maintains much of its ethnic heritage in its food. The Hole-in-the-Wall Tour takes you to four of the following restaurants: Pho Nam (Vietnamese) Zaffron (Indian) Sugoi (Local-style Bento & Plate Lunch) Antonio’s New York Pizzeria (Pizza & Cheesecake) Liliha Bakery (for the Hawaii-Famous Coco Puff Pastry) Scattered in four separate areas of metropolitan Oahu, these restaurants show you that good food is often found in the most unlikely places and that not all good food on Oahu is found in Waikiki. It really doesn't matter if you like all of the food you sample. There will be plenty of items that you will enjoy. For example, I am not big on vegetables and much of Vietnamese cuisine is heavy on vegetables. On the other hand, I really enjoy a good plate lunch and Sugoi was the perfect spot for a great Bento box with spicy garlic chicken, beef teriyaki and hapa rice. If you've ever had pizza in Hawaii, it's usually pretty bad, but Antonio's is owned and operated by two brothers from New Haven, Connecticut who make pizza like it should be made and cheesecake and cannoli to die for, As for the Liliha Bakery.... Well, you have to taste one of their coco puffs! This tour is offered daily from 10:00 a.m. to 2:00 p.m. The cost is a bargain at $59 per person. My drive today takes me from one season into another. I start the day in the endless summer that is Kailua-Kona-temperature a perfect, breezy 80 degrees F, but by afternoon I'm in the eternal 55-degree autumn of volcano country. Only in Hawaii. Break for the Coffee Belt I go from Kona to volcano country on Highway 11 or 180 via the Kona Coffee Belt, home of the famed, expensive bean. It's a world in miniature-tiny shops and houses tilting over the edge of lush green slopes with views of the misty blue Pacific 1,500 feet below. Make sure Driver Guy keeps his eye on the narrow, winding road as it passes through the scenic coffee villages of Holualoa, Honalo, Kainaliu, Kealakekua and Captain Cook. In the village of Holualoa, I always park in front of the rickety Kona Inn Hotel and run in to use its novel men's room. The restrooms are perched on a green cliff, with open-air views of the Pacific. Guaranteed your guy will get a huge kick out of this one. Treat this part of the drive as a coffee-tasting experience. Greenwell Farms, family-owned since 1873, lets you tour its orchards, which are white as snow in the spring when the first coffee blossoms pop out. Be sure to take home a pound or two of beans. They make a cup of joe that's wonderfully rich and strong-and redolent of the Big Island. Entering cattle country Volcano country a-waits, so head south on Highway 11. Road signs indicate the dates of the volcanic eruptions (1950, 1919, 1907) that sent lava bubbling down the slopes from the 13,680-foot Mauna Loa, which looms in the clouds somewhere above you. You'll pass in and out of thickets of eucalyptus. The smell of ripening mangoes makes the air seem-and almost taste-sticky sweet. (I always carry a plastic bag and a pocket knife on Hawaii drives. You never know when you might want to stop and pluck something tasty off a tree.) Just beyond Milolii, a quaint fishing village, follow a sign to South Point. Now you'll rumble through hot, arid cattle country. At South Point, you'll stand on a sheer and lonely bluff above the misty Pacific, the southernmost point in the U.S., the spot where the Polynesians, up from the South Pacific in outrigger canoes, first landed on these shores a thousand years ago. The first time I saw this killer view I vowed to myself, "You won't come back here alone." And I was right. When I next returned some years later, I brought my wife, who loved the whole area. However, she reminded me that she wasn't too keen on heights. We drove a short distance through the sagebrush and mesquite wilds to another end-of-the-world bay. Here she felt a little better. We gazed at some giant logs that lined the shore like lawn furniture, which had drifted all the way here from the Pacific Northwest. And you know, one made a perfect backrest for two. Hitting Hawaii Volcanoes National Park Now get set for the big climate change. You pass from summer to fall as you drive the last miles to Hawaii Volcanoes National Park. The park, 340 square miles, is all rain forest, dripping ferns and steaming fissures. Take the Crater Rim Drive, an 11-mile loop of the vast Kilauea caldera, at the center of which lies the always-steaming Halemaumau fire pit. The road dips through fern jungles, lava desert and plumes of sulphurous smoke. It's enough to give you the shivers. So warm your bones in the Volcano House, a venerable inn with tall windows looking onto the steaming caldera. The inn has a big lava-stone fireplace where a log fire has burned nonstop for 60-plus years-yes, they actually keep it stoked night and day. You can sit by the fireplace and take a nap (no one will disturb you). For dinner try Surt's, a cool cafe in the old Volcano Store. Then point the car downhill toward summer. Hanalei gets so much rain you could have a very wet vacation. It can be very nice but you never know. Maui's free locations are usually very small and crowded. The last two times I was on Maui it rained in Wailea and Lahina. I have seen as many as 14 couples show up at the same beach for a wedding.Oahu is fun and has good shopping, I don't consider it a romantic place. Many couples sit in traffic on their wedding day. I know the best sunset wedding location in Hawaii - and it's free. The sunsets are the best in Hawaii all year. It's like a machine - almost every night. Up at Waikoloa, just 25 miles from Kailua Kona on The Big Island of Hawaii, the rainfall is about 6 inches a year. Very little rain and excellent hotels and activities.What a great combination . One pro color film, one digital and one backup. This is a slow move to digital. Pro film is still nice with bright highlights - like sunset. Digital images are made availabe on your free web site. Also digital creates endless hours on the computer, but I feel it's worth it now - with the new cameras available. I am always striving to be the very best I can. The prints from digital are made on the same pro photo paper at our lab - made to last 100 years. Digital has arrived and it requires photographers to be computer geeks. I have been editing digital video for years already. Another really great feature about having everything on CD is my ability to edit in some of the best images from the photo shoot when making wedding DVD's - really impressive. Recently we had some bad weather pass by Hawaii. The clouds turned really nice colors after sunset - very very low light and after sunset. With the digital camera I was ready to capture the moment. The scene lasted less than TWO MINUTES. The flexability of digital allowed me dial in the equivelent of ASA 800 film to capture another very special photograph for them - along with the pro film - it's an added benefit that doesn't take away from what I've been doing for many years. This flexability (changing film speed in 10 seconds) is really wonderful. The other benefits of having everything on CD things like cropping and simple retouching at no charge. Also I can make an unlimited number of images. This is great for Photo Journalism style combined with the traditional. Also, if we have everything on CD, magazine style wedding album pages are possible in PhotoShop CS - really cool. Digital cannot be ignored and we are already a digital studio (video).Digital Video is way more complex than Digital Stills. Mention (email me) that you read this and I'll make a free automated website with photographs from your wedding. Available in 1 day. This is nice for family to see your wedding pictures on the net. Usually I email the password once the site is ready. Normally I will leave the site up for 60 days. Should family members want prints they can also order direct. Music, especially by Bach, helps reduce stress Heartbeat music calms chimps By Helen Altonn haltonn@starbulletin.com Music, particularly classical compositions by Bach, relieves stress, says a University of Hawaii music professor. "Of all the music we tested in medical school with patients, colleagues and others, Bach's music consistently made the brain work in a balanced way better than any other genre," said Arthur Harvey, who is also an internationally known neuromusicologist. Loudness, speed or tempo of music, the degree of dissonance and tone quality are primary elements of music that can affect health, behavior and emotions, Harvey said. He created a recording called "Bach for the Morning," intended for nursing home and hospital patients who "didn't wake up very nicely. ... Each piece gets a teeny bit faster, so it is a very helpful way to wake people up." He also has created a "Handel for Sleeping" recording and softly played Handel's music during a recent interview in his office at Calvary-by-the-Sea Lutheran Church, where he is musical director. Harvey has taught for 45 years and studied music as a force in education, religion and health. For the past 20 years, he has been interested in learning more about "why and what happens" when music is played. Therapeutically, he said, music "can be a tremendous intervention." It can relieve pain and stress, calm the heart rate and blood pressure, affect physical responses for healing and growth, and stimulate creative thinking, he said. Hawaiian music, for example, has orderly and predictable patterns that tend to be calming, he said. "Someone like brother Iz (the late Israel Kamakawiwo'ole), besides the emotional content of singing and beauty of his voice, the majority of his songs are near resting heart rate (62 beats a minute), in the lower frequency." Harvey created a recording of Hawaiian songs with a heartbeat tempo, "Island Sounds Healing Heart," to help care for senior Hawaiians with Alzheimer's disease and other dementias. It was done for Alu Like's Kumu Kahi Department. Cadences in the recording stimulate "feel-good chemicals" and physical systems that reduce effects of stress, he said. "If we utilize music that slows down the stress hormone, we then can help with things such as development of ulcers, diarrhea, even Crohn's (chronic inflammatory) disease and irritable bowel syndrome." Last year, Harvey tested the effects of Hawaiian, Japanese and Chinese music with a heartbeat on 37 volunteer patients, 50 and older, of cardiologist Dr. Pon-Sang Chan. He compared cardiac responses to recordings with heartbeat only, with heartbeat and keyboard performance, with heartbeat and vocal performance and heartbeat with both keyboard and vocal performances. The object was to see if music could be used as a relatively inexpensive technique to regulate the heart rate of cardiac patients, who tend to be highly stressed, Harvey said. All recordings helped, he said, but selections combining heartbeat, instrumental and vocal performances were most effective, calming and regulating the heart rate from 62 to 72 beats a minute. Joseph Ruszkowski, UH-Manoa music professor; Michelle Wong, of the Integrative Health Care Consortium; and Kathleen Cramer Baker assisted with the project. Harvey presented the results in June at a symposium of the International Society on Music in Medicine, founded by two anesthesiologists in Hamburg, Germany. He annually discusses how music can enhance health and learning at the Hawaii Medical Service Association's Akamai Living program, scheduled from 8:30 a.m. to noon May 22 at the Hawaii Prince Hotel. Harvey sings and plays 35 instruments, develops recordings and videos for therapeutic use and is a popular speaker at workshops and seminars. He is also a prolific author, writing about "Music and the Brain" and related topics. "He is so multitalented," Ruszkowski said. "He has a wealth of knowledge in so many areas and is an unbelievably good piano player. A lot of people around here (at UH) say he was a musical prodigy." Harvey said UH-Manoa offers music courses and workshops but not music therapy and training, which he would like to see integrated into the medical school's complementary and alternative medicine department. He was involved in establishing Sounding Joy Music Therapy Inc., a nonprofit organization, to educate the public about music therapy, provide clinical services and encourage research in therapeutic music. Among his new projects, the neuromusicologist is creating a recording of spirituals with a heartbeat for hospice patients and caregivers and a recording of Japanese lullabies with a heartbeat. Although he makes all kinds of music, he said he probably likes classical the best. "Sacred is second and I love old-time music, the '20s and '30s. I play it in hospitals regularly." But some music should be avoided, he said, pointing out excessively dissonant, loud and repetitive music can affect thinking, behavior and hearing. "And if you're impacted by emotional pulses, you tend to behave in a way that's not always rational." Music has been his "passport to the world," Harvey said, taking him to every state and 36 countries and places like the White House and Morocco's palace. BACK TO TOP | Heartbeat music calms chimps By Helen Altonn haltonn@starbulletin.com "Baby Go to Sleep," a recording of heartbeat music, works as well on rambunctious young chimpanzees as on infants, Joseph Ruszkowski has found. The University of Hawaii-Manoa music professor played Terry Woodford's recording in a recent pilot study to try to reduce aggression among young male chimpanzees at Honolulu Zoo. The heartbeat music has "proven statistically significant in helping very, very small infants fall asleep," including his own 15-month-old child, Ruszkowski said. The zoo has 10 chimpanzees -- four females and six males, four of whom are infants or juveniles, he said. "Since the males are entering adolescence, they are causing bodily injury and smashing glass," both of which are costly, he said. One broke a window that will cost about $50,000 to replace, he said. Brainstorming with Arthur Harvey, UH-Manoa music education coordinator, Ruszkowski said he developed a study for the chimpanzees similar to one Harvey conducted for cardiac patients. But Harvey was able to hook the patients up to monitoring devices, which he could not do with aggressive male chimpanzees and "keep all my fingers intact," he said. Ruszkowski said he played music about 30 minutes every morning for a week during the chimpanzees' most aggressive period. He played none in a trial period the next week. He has not finished analyzing preliminary data, involving 75 variables, but his general observation was the music had a calming effect on the animals within 10 to 15 minutes, he said. "They were so relaxed, some chimpanzees were falling asleep. That is something that never happened before." Greg Hamilton, primary chimpanzee keeper, said he is continuing to play Woodford's heartbeat recording or Harvey's "Hawaiian Music with a Heartbeat" if he feels the animals are riled up in the morning. Videotapes of Disney movies also are popular, particularly with 8-year-old Nalu, he said. After the chimps are taken from separate pens and put together in a group, there "definitely is increased aggression and excitement," Hamilton said. "It's all about troop dynamics, the socialization of these guys. We have 8-, 9- and 10- and 13-year-olds. They all have way too much testosterone. They're aggressive to prove themselves." He said 10-year-old Kona Kona broke the window, "just feeling like he's macho man and needs to prove himself." Using music to mitigate the aggression is a "win-win situation," he said. "If something happens, great. If it has no effect, we're still in the same situation."
