Called Hawaiian Regional Cuisine, his dishes fuse local ingredients and traditions with foods and techniques from Europe, Latin America, and Asia. Taking the succulent meat from whole Kalua Pig, pit-roasted luau style, he uses it in a risotto dotted with corn and crunchy water chestnuts, then enriched with truffle butter. He also features this smoky pork in nachos built on crunchy taro chips, topped with chile-spiked guacamole. His Surf and Turf, for example, features grilled beef tenderloin and a Kona lobster tail wrapped around a scallop. They are served with a roasted potato topped with wasabi-spiked mashed potatoes. This potato sprouts leaves of tat soi, an Asian green, and spiraling antennae of fried linguini. Grilled marinated mushrooms and asparagus add to the plate, which is drizzled with a sauce combining cream, truffle butter, and soy vinaigrette. Then it is ringed with shining dots of basil oil and finished with a sprinkling of chives and diced tomato. Lest this strenuous cooking intimidate you, it is easy to make Wong's Asian Guacamole flavored with ginger and sake, Five Spice Risotto rich with shiitake mushrooms, and Asian Ratatouille, unexpectedly enhanced with oyster sauce and sesame oil. Each adds immeasurably to a meal of grilled fish or store-bought roast chicken. Anyone with an ice-cream maker must try the recipes for tropical Guava, Lychee-Ginger, and Mango Lime ice cream, and a quartet of memorably exotic, liquored sorbets. To make sure your guest are well fed, and keep with the spirit of the luau experience, include a few traditional luau foods such as poi, papaya, pineapple and sweet potatoes in your menu. Poi is a thick, purple-colored paste made by pounding taro. Poi can be bought fresh or "day-old," which will have a more sour flavor to it. Slice fresh pineapple in half, cutting out the inside of the fruit (you can cut this into pieces and serve this separately), then fill with tuna or chicken salad. Even if you purchase a prepared salad from a local deli, throw in some fruit and nuts, like pineapple, papaya, mango, mandarin oranges, grapes, slivered almonds or walnuts for a truly tropical experience. It's all fun and games at Hawaii All-Star Paintball as players come out of the woods to celebrate their field of dreams Paintball before politics By Burl Burlingame Star-Bulletin THERE'S a steady, hollow drumming -- thwip! thwip! thwip! -- as if vinyl hail is falling. And the stuttering chatter of air bursts. And the occasional shouted command, or cheer of victory. But other than that, standing at ground zero as 300 people engage in rapid-fire combat at close quarters is surprisingly quiet. Opening day at Hawaii All-Star Paintball drew hundreds of players from around the island yesterday in a benefit for Hawaii Food Bank. Owner Brandon Cayetano estimated about 1,500 cans of food were collected. By Ronen Zilberman, Star-Bulletin Ray Contreras eyes the amunition being handed to him. The paintballs, decorated with spots and stripes, are lightweight, but sting when they hit. "Even the other fields shut down for today in support," said Cayetano. He stood atop a Matson container in the center of the playing fields, looking down into the arenas and occasionally shouting orders like the skipper of a pirate ship: "You! Yeah, you! Mask DOWN, brah! Safety first! You HEAR me?" Located on a largely ignored spit of landfill left over from freeway construction, Cayetano had a busy couple of months bulldozing and cleaning up the site. The field is divided into various arenas, each with varying obstacles and degrees of difficulty. The games are basically a variation of capture-the-flag. "When you get right down to it, it's just playing cowboys and Indians," he said. "Except that that you can spend a thousand dollars for your gear and get totally wrapped up in it." The paintballs themselves are surprisingly tough gelatin capsules the size of marbles, filled with water and biodegradable dye. They don't burst unless they strike the target dead-on. Otherwise, they bounce away. "Yeah, I suppose you could eat them," said Cayetano, eyeing the reporter who asks the question. "But why would you want to?" Players checking out the facility were happy with it, not just for the challenging courses but because of the location. Wayne Kiyabu, by day a worker at Frito Lay, was introduced to paintball by his brother -- "I was hooked by the first night!" -- and says that Cayetano's course is "just what Hawaii needs. "It's awesome, no kidding. The main thing is that it's centrally located. All the other courses are off in the sticks. It wasn't until I began playing that I realized how big the phenomenon was." Sheryl Miyagawa, Serene Kubota and Heather Enomoto, all about 20 and coeds, were trying paintball for the first time, and were enthusiastic. "It was totally fun," said Miyagawa. "But I didn't know it would hurt! When you get hit by the paintball, it stings!" "My friends told me, wear as much as you can, and they weren't kidding," said Enomoto. "Oh, it's not that bad," huffed Kubota. "Fun has its price." Brad Rodrigues, by day a sales broker, began paintballing about a year ago. "My friends said, hey, try 'em, and I really got into it. "This central location will really help the game. It has a lot of space and is organized. A field like this will draw good people into the game." Paintball in Hawaii, although popular, has yet to tap into the lucrative tour or corporate market. Some companies sponsor games as a teambuilding exercise. Although Americans have led the paintball charge, Cayetano has seen a shift in Japanese attitudes. Even 10 years ago, Japanese visitors were crazy for target shooting, but wouldn't shoot at anything resembling a human," Cayetano said. "But that has changed." Have they made us more eager to shoot-'em-up? Cayetano shook his head. "Paintball is the antidote to videogames. It's out in the open. Fresh air and exercise. You're a target too. But mostly, there's no concept of teamwork in a videogame. You won't win in paintball unless you pull together." Son o’ da guv is paintball commander BRANDON Cayetano has no intention of following in father Ben's political footsteps, and the governor has never played paintball, his son's passion. But the two share the gift of gab. Press Cayetano's "paintball" button and he goes, like 60 m.p.h. His new paintball field debuted yesterday near Sand Island and finally brings the islands into the modern age of the newly professional sport. "I first went crazy for paintball back in '83, and opened a competitive field in Waimanalo," said Cayetano. "I ran it basically so my friends and I could have a good time playing. I lost it in the early '90s. "I didn't have enough business savvy at the time to run it. I was naive." Discouraged, Cayetano ignored the sport for several years and explored what he calls the "dark side" of life. "Yeah, I got estranged from my family and friends. I knew what it was like on the streets, what it's like to be hungry. It was defensive times. I got into trouble. "But slowly, with the help of my parents, I worked my way back. I trained under computer gurus and got my act together." By coincidence, he worked as human resources and safety manager at United Laundry Services before the owner became his father's second wife. In the meantime, the paintball scene in Hawaii had stagnated, Cayetano believed. It was time someone brought it up to date, and why not him? His experiences in the '90s made him much more aware of the financial aspects of running a business. "In 1983, only the United States played paintball. Today, it's played in 39 countries and it's a $4-billion-a-year industry." Paintball is like any other sport, Cayetano said. It requires discipline, training, awareness and organization. This is created by creating fields like simulated war zones, with varying obstacles and handicaps. Paintball on Oahu had turned into a "renegade" game, with guys running around in the woods, just blasting away at each other. "We spent a lot of time just trying to tell people we weren't mercenaries in training!" he laughed. "There can be a kind of rift between the newbies and the tournament-level players. The newbies can get whacked on. They get excited, and the pros just rail 'em, which can be humbling and bum them out," said Cayetano. He intends to keep everything as even-handed as possible at the new site. Hawaii All-Star Paintball is divided into three zones or "fields" on a spit of land makai of the freeway near Sand Island. "It was trash land," said Cayetano. "I noticed it more than a year ago, and started the permit process to convert it into a paintball park." And no, being the governor's son didn't open any bureaucratic doors, he claims. "In fact, I think being the governor's kid might have slowed things down," he said. One zone comprises ABS water-pipe obstacles, a scenario called "hyper-ball" on the mainland. Another is what Cayetano called an "air-field," filled with inflatable obstacles, delivered by an airline with just hours to spare Saturday. "Thirteen grand to fly in balloons," he moaned. The third is a chessboard of mounds and berms for players to scramble over. The entire site is ringed with netting to prevent stray paintballs from whacking the freeway overpass. "The range on these things is only about 25 to 30 yards anyway," he said. "When I first started out in paintball, the guns were like pump shotguns, slow and inaccurate. Now you can even buy paintball guns for $1,200 that have computer chips in them to control your fire rate, like an automatic." Most paintball guns, though, run about $150, and are accurate enough to put a pattern in a pie plate at 20 yards. On the mainland, Army and Marine Corps use a paintball course for combat training because it's cheaper and more impressive than laser weapons. "When you get hit by a paintball, you know it," Cayetano chuckled. Cayetano raised the funds himself, mainly with the help of paintball enthusiasts like himself. Many show up after their 9-to-5s and help out in the evenings, getting the course ready. While dad doesn't play paintball, he knows Brandon has a passion for it. "Any father would want his son to follow in his footsteps," Brandon said. "But I'm more comfortable as a private businessman. Some people, like my Dad, are born to excel in politics. But not me!" Current update of the eruption of Kilauea Volcano, Hawai`i `o Eruption Summary Hazards History Panorama Images Eruption Update and Image Archive | deformation | images | maps | Pu`u `O`o camera | 0555 January 14[Note: Your observer will be way south of the border, almost astraddle the equator, for the next two weeks. The next regularly scheduled morning update will be on Monday, January 30. Updates may occur at irregular intervals in the interim.]The Full Wolf Moon is the brightest object visible this morning, for lava on Pulama pali is confined to small patches and rivulets in the west string of breakouts. The breakouts reache from about the 1400-foot elevation down to about the 900-foot elevation, with small lava patches down to about 300 feet, as noted by yesterday's field workers. Glow comes from just above the top of the pali, probably at about the 1900-foot elevation, and testifies to surface lava there, too. Yesterday's observers noted some lava along the far east side of the PKK flow just outside the national park at about the 200-foot elevation 3.8 km from the end of the Kalapana access road.Moderate glow comes from East Lae`apuki this morning. Lava rose from cracks that cut the front half of the delta on Thursday and added perhaps as much as 80 m to the west side of the delta. The observers estimated that at least a third of the delta is new or resurfaced by lava. Lava enters the ocean at numerous spots along most of the front of the delta, so that the laze plume is spread almost continuously along the water's edge. The delta is now about 500 m long (parallel to shore) but still only 140 m wide. The crater of Pu`u `O`o is badly socked in this morning, but glimpses appear of all vents except Beehive. Conditions were similar yesterday, and the field observers were skunked. They did witness, however, a breakout from the PKK tube at the base of the flank shield. It was not active at 0900, was going strong at ~1030, and was over by 1130. The breakout came from a shatter ring immediately down-tube from the bend in the tube at the base of the flank shield. This shatter ring may be the source for all the breakouts from the upper tube that have occurred since mid-December. The shatter ring is 60 m x 75 m across, and its southwest side is a 3-4-m-high, nearly vertical rubble wall. This area was very noisy, with cracking and scraping and lots of rock falling off, both during and after the breakout. Background volcanic tremor is about normal at Kilauea's summit this morning. Volcanic tremor is at a moderate level at Pu`u `O`o.Inflation at Kilauea's summit continued for the past 24 hours and has now recovered the 5.2 microradians lost during the deflation of January 9-10. In contrast, Pu`u `O`o is having a rocky, slow deflation that started midday January 12 and by this writing has lost almost 1 microradian. Current Deformation Map of selected deformation stations Electronic Tiltmeter Pu`u `O`o experienced bumpy tilt on January 7, 8, and early January 9; the bumps average out to flat tilt. Uwekahuna inflated slightly until noon January 7, deflated in the afternoon, inflated until early January 8, and then flattened and stayed flat for most of the day. It then started to inflated before midnight and continued up until 2141 January 9. Then Uwekahuna started a rapid, large deflation that finally ended at 2345 January 10 after a loss of 5.2 microradians. Pu`u `O`o inflated during January 8, following Uwekahuna, but it did not plummet when the summit started to deflate, instead maintaining flat to gently declining tilt throughout January 10 and into the 11th. Kilauea's summit began to inflate steeply at 2345 January 10, ending the deflation. The inflation continued through January 11-12-13 and into January 14 and had recovered all the tilt lost by the January 9-10 deflation by early January 14. Pu`u `O`o had pretty flat tilt until about noon January 11 and then began a slow inflation that continued until late morning January 12. The tilt that more or less stabilized before dropping a little that night and through January 13 into January 14, though the deflation was very irregular. This graph shows the radial tilt at Uwekahuna (UWE), on the northwest rim of Kilauea's caldera, and at Pu`u `O`o cone (POC), on the northwest flank of the active vent along the east rift zone, as recorded by continuously operating electronic tiltmeters. Positive changes indicate inflation of the magma storage areas beneath the caldera or Pu`u `O`o. Data are shown for a one-week period. A long-term trend of constant-rate, large deflation at Pu`u `O`o used to be removed for scale reasons, but starting on May 24, 2002, the tilt is shown as recorded, including the long-term deflation. The graph is refreshed at the same time as the eruption update at the top of this page, usually daily. The Y-axis is in microradians, an angular measure in parts per million; for example, one microradian represents the tilt of a 1-km-long bar, one end of which is lifted up or down 1 mm. Global Positioning System (GPS) Two years of data are shown in the plot. Between June 2003 and July 2004 the lengthening between the two stations was generally at a gradually increasing rate. The distance then became stable for nearly a month, but then extension resumed at a slightly slower rate than before the brief stable period. Extension picked up significantly in December 2004 and continued to lengthen rapidly until late February 2005. Then the line rather abruptly started to contract. The contraction ended in mid-March 2005, and the line remained steady until early May, when it began to lengthen once more. The lengthening continued until early July 2005, when the distance stabilized, coincident with a flattening of the tilt at Uwekahuna. Extension then resumed at a quickened rate in late July-early August 2005 and continued to late September. Then the rate of lengthening sharply reduced and perhaps even became zero for a time. Then, in November 2005, the line began to lengthen once more, only to stabilize once more at the end of the year. This graph shows the change in distance between two Global Positioning System (GPS) stations located on opposite ides of Kilauea's caldera. A rapid increase in distance can be interpreted as inflation of the summit magma reservoir. The graph is refreshed at the same time as the eruption update at the top of this page, usually daily. Yellow, brown, and red colors indicate lava flows erupted from October 2003 to December 16, 2005. Yellow indicates the currently active Kuhio (PKK) flow, active most of the time from March 20, 2004 to the present. The east and west arms of the PKK flow, once widely separated, began to merge and overlap on the coastal flat in March 2005. The east arm feeds the East Lae`apuki ocean entry. Activity on the west arm declined through mid-August, and the last surface flow on that arm was observed on August 21. The recent (November-December 2005) breakouts on Pulama pali described as "eastern" and "western" are all on the east arm of the PKK flow. The brown shade denotes Martin Luther King (MLK ) flows, which first erupted in January 2004 from flank vents on the south slope of Pu`u `O`o. Since then, several more vents have formed in the MLK area and continue to erupt intermittently. Red indicates the Mother's Day and Banana flows, last active in September 2004. Short flows from the crater, West Gap, and Puka Nui vents are also shown in red. In recent months, only the Puka Nui vent has produced infrequent, small flows. The vents, lava tubes, and flows active in 2005 include the numbered vents in the crater, the MLK vent complex and associated flows, the Puka Nui vent, and the upper Kuhio (PKK) tube, which feeds the lava flows eventually reaching the ocean.
