I found myself craving for the "local Hawaiian food" I left behind. Every chance I have, I return home and the first thing I do is eat at my favorite local Hawaiian restaurants. The cultural mix in Hawaii is amazing. The Hawaiians, Chinese, Japanese, Portuguese, Filipinos, Thai and the Koreans all have made valuable contributions to Hawaii's multicultural society. And because we have this Asian and Polynesian blend, Hawaii has become a "gathering place" for chefs to practice their craft. The festive culinary possibilities are endless. But, nobody can argue, home-cooked meals are the best. Most people would have to agree that their favorite foods are the ones that mom and dad would make for them at home. They bring happy memories back to us when we eat them. Remember what "the Insider" said about the reason for some local restaurant's success? The reason that places like Bouchon, Ca Dario, Luckys, Miro, and Opal have maintained that expected level of excellence to cost ratio is because they follow the key ingredients of fine dining. The perfect staff (I use the term loosely) excels in knowledge, attention to details, personality, patience and have the powers of assessment. The perfect management/ownership (again on the loose side) display trust, have strict training requirements, must be available to staff and customer alike and remain consistent. Managers/owners are like parents, coaches, and in their own way, gods. This is the "success formula" from the L&L website: The owners attribute their success to a decentralized system of ownership in which each restaurant is a separately incorporated profit center run by partners in the corporation or individual owners. Correction--"a separately incorporated profit center." I knew nothing about L&L when I drove out there. I secretly hoped that it would be a real bbq. It isn't. But it *is* good, at least what I had (combo #1 bbq mix plate). No underground pit, no whole pig, but it wasn't bad at all. More of a bbq sauce place than a bbq, since I didn't see anything resembling a bbq. To some folks, the glass is always half full... And the transvestites dont even hangout infront of or inside the restruant anymore, and they are not aloud to sell themselves at the restruant or bother the custamers in any kind of way. What element distinguishes an ethnic music style from other ethnic music styles? For example, what is the difference between Okinawa music and Scotland music? I think elements of music are (1) melody (scale), (2 ) chord, (3) rhythm, and (4) instruments. First, let's think about melody. Rock and Blues are easy examples, even though they are not ethnic music. Rock uses normal music scale while Blues includes blue-notes in its music scale. Next, think about chords. Rock uses simple chords (triad) while Jazz includes 7th in its chords. Chord progression of Jazz is more complicated than that of Rock as well. For rhythm, Rock uses 8 beat, Fusion uses 16 beat, Jazz uses 4 beat. Finally, think about musical instruments. It is easy to see differences between Classical music and Rock music. Especially, musical instruments are important elements of ethnic music, since each country has different music instruments. I am trying to capture features of each ethnic music style based on this idea, and to reproduce them with automated composing system. This page includes considerations that I faced when I embedded functions of ethnic music composition. About Hawaiian Music I am not sure that people consider Hawaiian music as ethnic music. But the music has very strong characteristics. Hawaiian music uses very slow sliding guitars and ukuleles. Guitar strings are tuned for major chord. (This kind of guitar is called slack key guitar.) So, Hawaiian music uses many major chords in its chord progression. I am not sure but I guess guitarist uses bottle neck and scratch strings with it. (I need more information,please help me.)
