That’s probably not one of the top reasons most people visit the islands, but the canned processed pork is popular at restaurants catering to locals, sharing the menu with other classic Hawaiian dishes such as lau lau (fish, beef or pork wrapped in taro leaves), loco moco (steamed rice topped with a hamburger, a fried egg and brown gravy) and shredded Kalua pig. American soldiers introduced the Hawaiians to Spam during World War II. Now nearly 7 million cans are sold annually in the islands, according to the Hormel website. But if Spam doesn’t appeal to your tastebuds, it’s not a problem. There’s plenty of other grind (food) that locals find ono (delicious). One favorite is the inexpensive but generously portioned Hawaiian plate lunch. It can incorporate Chinese, Japanese, Korean, Filipino, Hawaiian and American dishes — often all on one plate — and is best eaten on a day when there’s nothing planned for the afternoon except a nap on the beach. Here are some fun, funky and fabulous places for local grind. Maui The exterior of the restaurant, which has no sign. Top left: The clay pot at A Saigon Cafe A Saigon Cafe There is no sign for A Saigon Cafe, but people find it anyway, says manager Nguyan Nguyan (friends call him Chicken Wing.) Located in Wailuku Town, about 15 minutes from Kahului Airport (Maui’s main airport), A Saigon Café uses fresh, local ingredients for its Vietnamese dishes, which have attracted an enthusiastic local following. Nguyan said the Food Network’s Rachael Ray recently featured the restaurant for a Maui segment of “$40 A Day” and interviewed him. “I’m a movie star,” he said. Favorites include calamari, shrimp and clay pot (shrimp and fried rice), sauteed string beans, chicken salad, stuffed tofu, steamed fresh fish of the day (served whole) and spring rolls. A Saigon Cafe, 1792 Main St., Wailuku; (808) 243-9560 Da Kitchen’s fish tempura Da Kitchen “People will eat any kind of food, the same food two or three times a week, as long as it’s good food,” said Da Kitchen’s owner Les Tomita, explaining the restaurant’s philosophy. Five minutes from Kahului Airport, Da Kitchen is popular with tourists and locals, who drop by to enjoy traditional Hawaiian food — Kalua pork, lomi (salted salmon chopped with tomatoes and onion), lau lau, chicken long rice, poi and plate lunches with such entreés as teriyaki chicken, Korean Kobe ribs, hamburger steak cutlets and fish tempura served with rice and macaroni salad. Kauai Caffe Coco Located on the edge of a cane field, with a view of Sleeping Giant Mountain across the fields, Caffe Coco’s courtyard dining room is all lush vines, exotic foliage and tropical flowers. At night, tiki torches blaze, live jazz plays and the food is, according to owner Ginger Carlson, “unpretentious, healthful and world class. No deep frying.” Offerings include macadamia nut and black sesame crusted ahi with wasabi cream, Moroccan-spiced tofu and roast-veggie wraps, curried sweet potato samosas and silver noodle salad. Carlson also sells a line of condiments used in the restaurant. A favorite is Jungle Jazz, a guava-based grilling sauce ($4 a jar). Caffe Coco, 4-369 Kuhio Highway, Kapaa; (808) 822-7990 Tropical Taco Surfer and restaurant owner Roger Kennedy is something of a local legend on Kauai. Back in the ’70s, the California native was given a one-way ticket to Hawaii from his father as a high school graduation present. After stints working in the pineapple and cane fields, Kennedy started looking for a way to “teach surfing and not starve.” He bought a lunch wagon and parked it, loaded with surfing paraphernalia, on the edge of Hanalei and waited for the lunch crowd to show up. They arrived in droves, ravenous for his tacos, burritos and Fat Jacks (10-inch burritos). Five years ago, he opened a sit-down place (24 chairs and 17 stools) outside in Hanalei Town. All the food is made to order which, Kennedy admitted, can sometimes lead to a 25-minute wait for a taco, especially since he likes to talk to customers as he cooks. Said manager Celine Molina, “Everything is made with love. We just ask for patience.” Tropical Taco, Halele’a Building, 5-5088 Kuhio Hwy. Hanalei; (808) 827-8226 Hawaii The main dining room at Huggo’s. Huggo’s (indoor dining) and Huggo’s On The Rocks (informal) When Hugo and Shirley von Platen Luder opened Huggo’s back in 1969, it quickly became a gathering spot where local fishermen met to “talk story” (Hawaiian for shoot the breeze). Today, it’s still the place to go for fish macadamia nut-crusted mahi mahi, crab-crusted ono (the No. 1 requested dish) and Asian-seared ahi. Times change, though. Where commercial fishermen once called in on two-way radios to report their catch, they now use cellphones, says the von Platen Luders’ son, Eric, who now manages the restaurant. The yellow fin tuna caught in the morning, he said, may end up as the dinner special that night. Live entertainment is featured at the spectacular oceanfront location. Huggo’s, 75-5828 Kahakai Road, Kailua-Kona; (808) 329-1493 Ocean View Inn In business for 70 years, the family-owned Ocean View Inn, across from the Kailua Pier, is the oldest restaurant in Kona. Jeannette Kuwadu, the restaurant’s manager and granddaughter of the original owners, said that except for the prices, which have gone up a bit, the menu hasn’t changed much over the years. One can still find chopstick rice, tripe stew, poi, lau lau, Kalua pork, raw fish and Spam with eggs or cabbage. Inexpensive and popular with locals, the restaurant has a casual and friendly service. Go with an appetite — the plate lunches are large, fried and carb laden. Ocean View Inn, 75-5683 Alii Drive; (808) 329-9998 Oahu Wally Ho’s Garage & Grill Wally Ho ran a gas station and repair shop at this location for 40 years. But a few years back, the gas tanks sprang a leak so they were hauled away, a commercial kitchen was installed and Wally’s became a garage and grill. Ho is retired now, but his daughter, Willette — who manages the family-owned business — describes the fare as healthy Hawaiian with an emphasis on fresh. This means, for example, you can choose brown rice instead of white for your plate lunch, order a green salad and know that the food is prepared without a lot of fat. The fish is fresh. On Fridays and Saturdays, Wally’s serves Hawaiian food — lau lau, Kalua pig, lomi, a choice of rice or poi and, for dessert, haupia, described by one aficionado as a sinful but angelically white coconut desert. Hotspots [This Dynamic Earth, USGS] The vast majority of earthquakes and volcanic eruptions occur near plateboundaries, but there are some exceptions. For example, the Hawaiian Islands,which are entirely of volcanic origin, have formed in the middle of thePacific Ocean more than 3,200 km from the nearest plate boundary. How dothe Hawaiian Islands and other volcanoes that form in the interior of platesfit into the plate-tectonics picture? Tuzo Wilson, the Canadian geophysicist who discovered transformfaults, came up with an ingenious idea that became known as the "hotspot"theory. Wilson noted that in certain locations around the world, such asHawaii, volcanism has been active for very long periods of time. This couldonly happen, he reasoned, if relatively small, long-lasting, and exceptionallyhot regions -- called hotspots -- existed below the plates that wouldprovide localized sources of high heat energy (thermal plumes) tosustain volcanism. Specifically, Wilson hypothesized that the distinctivelinear shape of the Hawaiian Island-Emperor Seamounts chain resulted fromthe Pacific Plate moving over a deep, stationary hotspot in the mantle,located beneath the present-day position of the Island of Hawaii. Heat fromthis hotspot produced a persistent source of magma by partly melting theoverriding Pacific Plate. The magma, which is lighter than the surroundingsolid rock, then rises through the mantle and crust to erupt onto the seafloor,forming an active seamount. Over time, countless eruptions cause the seamountto grow until it finally emerges above sea level to form an island volcano.Wilson suggested that continuing plate movement eventually carries the islandbeyond the hotspot, cutting it off from the magma source, and volcanismceases. As one island volcano becomes extinct, another develops over thehotspot, and the cycle is repeated. This process of volcano growth and death,over many millions of years, has left a long trail of volcanic islands andseamounts across the Pacific Ocean floor. According to Wilson's hotspot theory, the volcanoes of the Hawaiian chainshould get progressively older and become more eroded the farther they travelbeyond the hotspot. The oldest volcanic rocks on Kauai, the northwesternmostinhabited Hawaiian island, are about 5.5 million years old and are deeplyeroded. By comparison, on the "Big Island" of Hawaii -- southeasternmostin the chain and presumably still positioned over the hotspot -- the oldestexposed rocks are less than 0.7 million years old and new volcanic rockis continually being formed. The possibility that the Hawaiian Islands become younger to the southeastwas suspected by the ancient Hawaiians, long before any scientific studieswere done. During their voyages, sea-faring Hawaiians noticed the differencesin erosion, soil formation, and vegetation and recognized that the islandsto the northwest (Niihau and Kauai) were older than those to the southeast(Maui and Hawaii). This idea was handed down from generation to generationin the legends of Pele, the fiery Goddess of Volcanoes. Pele originallylived on Kauai. When her older sister Namakaokahai, the Goddess of the Sea,attacked her, Pele fled to the Island of Oahu. When she was forced by Namakaokahaito flee again, Pele moved southeast to Maui and finally to Hawaii, whereshe now lives in the Halemaumau Crater at the summit of Kilauea Volcano.The mythical flight of Pele from Kauai to Hawaii, which alludes to the eternalstruggle between the growth of volcanic islands from eruptions and theirlater erosion by ocean waves, is consistent with geologic evidence obtainedcenturies later that clearly shows the islands becoming younger from northwestto southeast. Prominentworld hotspots [54 k] Although Hawaii is perhaps the best known hotspot, others are thought toexist beneath the oceans and continents. More than a hundred hotspots beneaththe Earth's crust have been active during the past 10 million years. Mostof these are located under plate interiors (for example, the African Plate),but some occur near diverging plate boundaries. Some are concentrated nearthe mid-oceanic ridge system, such as beneath Iceland, the Azores, and theGalapagos Islands. A few hotspots are thought to exist below the North American Plate. Perhapsthe best known is the hotspot presumed to exist under the continental crustin the region of Yellowstone National Park in northwestern Wyoming. Hereare several calderas (large craters formed by the ground collapseaccompanying explosive volcanism) that were produced by three gigantic eruptionsduring the past two million years, the most recent of which occurred about600,000 years ago. Ash deposits from these powerful eruptions have beenmapped as far away as Iowa, Missouri, Texas, and even northern Mexico. Thethermal energy of the presumed Yellowstone hotspot fuels more than 10,000hot pools and springs, geysers (like Old Faithful), and bubbling mudpots (pools of boiling mud). A large body of magma, capped by a hydrothermalsystem (a zone of pressurized steam and hot water), still exists beneaththe caldera. Recent surveys demonstrate that parts of the Yellowstone regionrise and fall by as much as 1 cm each year, indicating the area is stillgeologically restless. However, these measurable ground movements, whichmost likely reflect hydrothermal pressure changes, do not necessarily signalrenewed volcanic activity in the area. Located on Highway 30 in Kapalua. Look for public beach access between the Napili Kai and the Kapalua Bay Club. Cemetery The area just north of Wahikuli Park has good calm swimming area. Mostly sandy bottom. Good for beginners. Wahikuli Park Picnic tables, restrooms, showers, a good sandy beach, easy access for swimming, snorkeling and scuba diving. Mana Kai Hotel Located on South Kihei Road. Good snorkeling along the rocky coast in front of the hotel. Enter the water on the sandy beach to the left and snorkel along the rocks to the right. Ulua Beach / Mokapu Beach Located in the heart of Wailea Resort. Turn right on public beach access just past the Stouffer Wailea Hotel. Snorkel and scuba diving on the rocky point between both beaches. Deeper reef extends further out. Showers and restrooms. Molokini Crater One of Maui's four marine preserves. Hawaii's most exciting snorkeling and scuba diving destination. Accessible only by boat. Call any Maui Dive Shop for reservations. Wailea Beach Look for a public beach access parking lot between the Grand Wailea and the Four Seasons Hotel(s) in Wailea. Excellent sunbathing/swimming beach with good snorkeling and scuba diving to the left. Makena Landing/Five Caves (5 Graves) Just past the Makena Surf Condo, turn right on Makena Road. Proceed 4/10ths of a mile to a large brown sign saying Makena Landing.Parking, showers, and restrooms are available. There's good snorkeling to the left of the bay, excellent scuba diving to the right. About 2/10ths of a mile back along Makena Road is Five Caves/Graves. Underwater caves and ledges highlight this area. The outer reef is home to a large green sea turtle colony, sometimes caller "turtle town". WARNING: Do Not Enter The Caves. Makena Beach Drive through the Makena Resort community to the Maui Prince Hotel. You will see a large red hill (cinder cone) in the distance, called"Pu'u O Lai". Makena Beach extends from the base of this hill, south one mile. There are two paved parking lots on the right side of the road. This is one of Maui's most popular beaches. WARNING: Not Recommended For Snorkeling, Diving, Or Boogie Boarding Due To Large Surf and Strong Currents. Baldwin Beach Located on Highway 36 driving towards Paia. Park facilities, family beach, good swimming, beautiful white sand beach, often windy. Not recommended for beginners. Honolua Bay One of Maui's four marine preserves. 6/10 ths of a mile past mile marker 32 on Rout 30, north of Kapalua. Look for a narrow dirt road that leads to the bay where there is a old boat ramp. Good for snorkeling and scuba diving. Best in the summer. Kahekili Beach Park (Old Airport Beach) Driving north on Rout 30 towards Kapalua, enter at the northern-most entrance to Ka'anapali Resort. Look for public beach access and parking towards the right. Facilities include a pavilion, showers, restrooms, picnic tables. Good for beginners. Black Rock (Sheraton Hotel) In the midst of Ka'anapali Resort, there is excellent diving and snorkeling around the lava rock in front of the hotel. The fish and eels are tame from hand feeding (Beware, they can still bite!) so no spear fishing please. Olowalu South of Lahaina on Rout 30 look for mile marker 14. One of Maui's most popular snorkeling and scuba diving areas. Easy access with abundant coral and fish. McGregor Point (Lighthouse) On Highway 30 towards Lahaina from Ma'alaea, 7/10ths of a mile past mile marker 7. Turn left on the gravel road leading to the lighthouse. Recommended for advanced diving only. Kamaole Parks I, II, and III Kihei's best beaches for swimming and sunbathing. Found along South Kihei Road before entering Wailea. Excellent for beginners. The best diving is found along rocky points on either end of the beaches. Lifeguards are on duty. Good for boogie boarding. Available facilities include restrooms and showers. Ahihi Bay One of Maui's four marine reserves. Located about 1.5 miles past the Maui Prince Hotel. Look for a small bay right beside the road, next to a hexagon-shaped house. There is a second entry location a 1/2 mile further down the road, look to your right for a gravel parking area. No beach facilities. Excellent snorkeling and scuba diving. La Perouse One of Maui's four marine reserves. Located 2 miles past Ahihi Bay over a rugged lava flow. Paved road, no facilities. Excellent snorkeling and scuba diving for experienced divers. WARNING: Use Caution On Entries And Exits Due To Rugged Coastline. Hana Bay Snorkel between the pier and the lighthouse. Stay well inshore as the currents can be very powerful outside. Good coral and fish. Keanae Located halfway between Paia and Hana on the Hana Highway. Good local fishing spot, beautiful and picturesque. Not recommended for diving. Ho'okipa Beach Park Located on Highway 36, just past Paia. Famous as a world class windsurfing beach, picnic tables, showers, and restrooms. Not recommended for diving.
